Sweet Potato Carrot Cake


1 cup grass fed butter
2 cups coconut or pure cane organic sugar
4 large cage free eggs
1 teaspoon vanilla extract
3 cups all-purpose  unbleached flour 
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 cups cold mashed sweet potatoes
1/2 cup shredded carrots

​​In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg; add to creamed mixture alternately with sweet potatoes and carrots. Beat just until combined (batter will be stiff). Pour into a greased and floured 10-in. fluted tube pan. Bake at 350 for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Healthy Recipe of the Month!

Chai Chia Pudding 

Ingredients
​

1 1⁄2 cup unsweetened almond milk or other non dairy milk 1⁄4 cup white chia seeds
1 tbsp pure maple syrup
1⁄2 tsp vanilla extract
1⁄4 teaspoon ground cinnamon
Pinch of ground cardamom
Pinch of ground cloves
1⁄2 cup sliced banana, divided
1 tbsp chopped unsalted roasted pistachios, divided

 
  1. Stir Almond Milk(or nondairy milk of choice),chia seeds, maple syrup, vanilla, cinnamon, cardamom and cloves together in a small bowl. Cover and refrigerate for at least 8 hours and up to 3 days. 
  2. When ready to serve, stir well. Spoon about half the pudding into a serving glass(or bowl) and top with half the banana and pistachios. Add the rest of the pudding and top with the remaining banana and pistachios.
    To make ahead: refrigerate pudding (Step 1) for up to 3 days. Finish with Step 2 just before serving.

Fruit Salad with Honey Ginger Dressing!

Today we served our recipients a fresh fruit salad with honey-ginger citrus dressing! 

Did you know that ginger is often helpful with reducing “stomach problems”, such as nausea, gas, and diarrhea? Ginger may be effective for decreasing nausea and vomiting after surgery.  Ginger may calm your stomach and reduce nausea during treatment, however, everyone is different.

Honey Ginger Fruit Salad

INGREDIENTS
3 tablespoons honey 
2 tablespoons orange juice
1 tablespoon lemon juice
1 tablespoon fresh chopped mint
1 teaspoon fresh minced ginger
2 cups cubed melon, such as honeydew and/or watermelon 

2 cups seedless red grapes, halved
1 pint strawberries, halved

Mix honey, orange juice, lemon juice, mint and ginger in a small bowl until well blended. Place fruit in large serving bowl. Add dressing; toss gently to coat. Cover.Refrigerate at least 2 hours or overnight to serve .

​Broccoli contains indoles which are effective in protecting against certain forms of cancer. It has a rich supply of vitamins and minerals. In this recipe, by sautéing the broccoli in olive oil, infusing it with broth and then blending, releases all of its sweetness and cancer fighting properties and helps everything go down nice and easy!
